7 Layer Bean Dip

Ingredients

Scale
  • 2 cans – Refried Beans
  • 2 tablespoons – chili powder
  • 1 teaspoon – ground cumin
  • ½ teaspoon – garlic powder
  • 8 ounces – sour cream
  • 3 Avocados – peeled and seeded
  • 1 tablespoon – lemon or lime juice
  • ¾ cups – Salsa
  • 2 cups – Mexican blend Cheese
  • 1 – Roma tomato (Diced)
  • Tortilla Chips – for serving
  • Optional: Scallions/Green Onions

Instructions

  1. Add the refried beans to a mixing bowl. Season with chili powder, cumin, garlic powder, salt and pepper. Taste and add more seasoning if desired.
  2. Spread beans into a single layer in a casserole pan (9 x 13)
  3. Add Avocado and lemon or lime juice to a bowl and mash well with a fork. Spread into an even layer, over the beans.
  4. Spread sour cream into an even layer, over the mashed avocado.
  5. Dollop small spoonfuls of salsa over the sour cream.
  6. Sprinkle with cheese, diced tomatoes and green onion.
  7. Add olives if you like them.
  8. Refrigerate until ready to serve w Tortilla Chips.
